We begin by carefully trimming the finest cuts of Silverside beef, or opting for a lightly marbled salmon cut silverside. The meat is then marinated for 6 to 12 hours, seasoned with our signature spices and extra chilies for that fiery kick, and dry-cured in custom wooden boxes for 3 to 4 days, depending on the conditions.
