Product Information

Biltong originated in South Africa and is a cured and air-dried meat snack (spiced dried beef).

We marinade our beef in vinegar and other ingredients to start the curing process.

DryWors/Droewors (Dry sausage) is a traditionally air dried and cured thin beef sausage known as boerewors, usually made from beef with pepper, salt and coriander spicing.

We use the best quality grass fed British and Irish Beef silverside to make this healthy protein snack.

Biltong is an excellent source of protein, containing approximately 30 grams of protein per 100 grams.

Yes, biltong is rich in vitamin B3, B6 and B12 and contains iron, selenium and zinc making beef Biltong a healthy snack, rich in protein.

Both wet (soft) and dry (hard) biltong varieties are derived from the same curing and drying process, with the primary difference being the length of the drying time, which determines the moisture content and texture of the final product.

Wet biltong has a soft, chewy texture and a slightly tangy flavor. It has a more red colour to it.

Dry biltong has a firm, tougher texture and a rich, beefy flavor. It has a deep brown/black colour to it.

Our Biltong and DryWors is made in South Wales using our own hand made wood drying cabinets. We control the entire process including cutting the beef, marinading, spicing, production and packaging.

Put the biltong in a brown paper bag and store it in a dry cool, place.

Wet biltong can quickly go bad if it doesn’t have good circulation, so store it in a clean, dry paper bag. A paper bag allows the biltong to "breathe" and is better than a plastic bowl.

  • You can leave the bag out on the counter or in a cabinet, as long as it’s less than 70 °F (21 °C) and out of the sun.
  • Keep the bag closed to help prevent pests.
  • If you have a large piece of uncut biltong, you can store it in a paper bag or wrapped in newspaper.

Stir the biltong every day to ensure air flow.

If your biltong is very wet, shake the bag or stir the meat several times a day. For dryer biltong, like stokkies, you only need to stir it once a day.

  • Mixing up the biltong allows all sides of the meat to be exposed to the air and reduces the risk of mold.

Eat the biltong within a few days.

Biltong is dried and cured, which means it hasn’t been cooked and there are no artificial preservatives.

The biltong must be opened within 10 days of receiving your order.

Eat the biltong within 4 days of opening it to prevent mold from ruining your South African treat.

If you want to keep your biltong longer, then place it in a vacuum sealed bag and pop it in the fridge.

 Biltong can be frozen

  • Biltong can can freeze for up to a year, but the texture may be slightly different.

Defrost it on paper towels so your that your biltong does not get wet.

Biltong can change colour

If your biltong was slightly pink when fresh-cut, and it goes a little darker, that’s nothing wrong. It’s merely a little oxidation. Of course, you should always use your common sense- if it was left somewhere in the sun, has gone unpleasantly hard, or smells strange, don’t eat it!

Good biltong will only go bad through bad storage, so knowing how to store your biltong is a valuable skill to learn.
